Inza - Washed - Regional Blend

This washed lot comes from Colombia’s notably mountainous Cauca region, home to volcanoes and the like. Grown at heights ranging from 1600-1850 MASL, this coffee was grown by a group of small producers in the municipality of Inza Cauca. This topography provides mineral rich soil to grow coffee. These small producers came together in 2015 in an effort to achieve a bigger volume and a better price for their coffee. The 10 original farmers produce 20 tons per year, but they are planning to expand with the surrounding farms to increase their volume. We welcome this expansion and are delighted to be able to offer their coffee to you. For their washed process they undergo a 12-36hr fermentation. The coffee is picked at its optimal maturity moment and then floated to remove the less dense coffee. After the coffee is floated it is depulped and placed in open tanks where the coffee is fermented without water. After the fermentation is done the coffee is washed 2-3 times before is ready to dry for around 7 days on raised beds in a plastic tunnel with sun and natural airflow, moving the coffee every 4 hours. This drying process is favorable to avoid over-fermented flavors. For the last 2 years Colombia has experienced a very intense rain season, resulting in the need to dry the coffee in mechanical silos. Once a moisture content of 10-11.5 % is reached, the coffee is moved to the mill for hulling and packaging prior to shipment.
