Our Sublime designation represents a coffee that is farm traceable and usually a smaller sized lot than what we would purchase for our Regional Selects. We cup through many many offerings from our partners each year to decide on the lots that we want to import and offer to you. If there is a farm you’ve had in the past but don’t see now just let us know and we can make sure to get you some samples when we request offers.  Our friend Jonatas is a rising star in specialty coffee. After earning a degree in agronomy he moved back to Carmo de Minas and put what he learned about post harvest technology, soil mineralization and new processing techniques into action on his family’s 100+ year old farm, Sitio Grota Funda. His farm is often a top 25 contender in the the Cup of Excellence competition. Jonatas grandmother Helena named this particular plot Coqueiro in 1924 for the abundance of coconut palms that surround the property. This lot has been mechanically pulped on a Pinhalense like a white honey, with about 20% mucilage still adhering to the seed. The coffee is soaked for 24 - 36 hours in tile lined tanks while fermentation goes to work breaking down layers of pectin before the coffee is spread out to dry in the sun on patios for 11-12 days before moving to a mechanical dryer. The end result showcases what taking care in the whole process results in; a wonderfully bouyant coffee that makes a great daily drinker.
